Breakfast Blueberry Oat Bars


Ingredients


Include everything your reader needs to make this recipe perfectly, with measurements, optional additions, or alternatives. For example:


TOPPING 2 cups frozen blueberries 1/4 tsp pure vanilla extract 2 Tbsp date paste 2 Tbsp ground flax seeds


BAR 2 ripe bananas 1 cup ground oats 1 cup rolled oats 1/4 tsp pure vanilla extract 1/2 tsp ground cinnamon 1/3 cup date paste 1/4 cup shredded coconut flakes pinch of sea salt



DATE PASTE

6-8 pitted medjool dates 6 Tbsp warm water

*optional to add crushed nuts on top!


Directions

  1. Preheat the oven to 375 F degrees and line an 8x8 glass baking dish with parchment paper.

  2. To make the date paste, blend the dates and water together in a food processor or high-speed blender until smooth.

  3. To make the topping, place the frozen blueberries in a saucepan over medium-high heat. Simmer for 10 minutes or until the blueberries are soft. After this, add in the vanilla and 2 Tbsp date paste; stir to combine.

  4. To make the bars, mash the bananas until smooth in a large bowl. Add in the ground oats, whole oats, vanilla, cinnamon, remaining date paste and coconut. Mix well.

  5. Place the mixture into the lined baking dish and spread evenly.

  6. Add the blueberry topping on top. Make sure not to spread it fully to the sides of the dish or it will burn.

  7. Bake for 30 minutes, checking halfway through. Bars are done with the sides are golden brown. Remove and enjoy!


MAKES 6 SERVINGS
