Cranberry Orange Muffins Recipe

One big push back that I get about eating healthier, is that healthy food doesn’t taste good. Which is so not true! I have discovered so many amazing foods that taste great and also have great health benefits. And if you give it a real chance, you can find ways to make foods healthier while still tasting great. Sometimes you can’t even tell they are a healthier version, like with these cranberry orange muffins! Give them a try and see for yourself! 😋

Cranberry Orange Muffins

Makes 12 muffins


Ingredients

2 Tbsp orange zest

2 Tbsp flaxseed meal

1/3 cup fresh orange juice

2/3 cup pure maple syrup

2 Tbsp coconut oil

2 Tbsp unsweet almond milk

1 tsp pure vanilla extract

1 cup almond flour

1 cup oat flour

3/4 cup cornstarch or potato starch

1 tsp baking powder

1 tsp baking soda

1/4 tsp sea salt

1-1/2 cup fresh or frozen cranberries


Directions

1.) Preheat oven to 350F and line a muffin tray with 12 muffin cups.

2.) In a medium mixing bowl combine the orange zest and flaxseed meal. Next add the orange juice, syrup, oil, milk and vanilla. Whisk well until there is no separation between the oil and wet ingredients.

3.) Then add the almond flour, oat flour, cornstarch, baking powder, baking soda and salt. Whisk to combine and break up any clumps. Lastly, fold in the cranberries and distribute evenly.

4.) Divide the batter evenly between the muffin tins and bake for 35-40 minutes. The tops will be golden and spring back when touched. Remove and let them cool for at least 10 minutes before removing to a cooling rack for 20 more minutes.

5.) Enjoy warm or at room temperature! Then store in an airtight container at room temperature for 1-2 days or in the fridge for 3-4 days.
