What if I told you meal prep and meal planning doesn't have to be over complicated?

I know you have the thoughts of like "Yeah right you just don't understand I don't have time to plan much less prep." Well I used to think the same way until I broke out and just gave it a try. Now I will say that most of the time I seriously failed, but I learned what didn't work to find what did work for me. This also changes depending on the season and just what stage on our life we are in.


Let's dig into what didn't work for me? Here are a few things that seriously make me shake my head no way not for me! First I hate eating Salads, So for me I would much rather make my own menu for the week, so no copying others meal plan, now this may not be you and that's ok. The point is to figure out what works for you!!!


The other big thing that didn't work for me was creating multiple big recipes, I like to keep it simple, we eat repeats during the week because I don't have to cook as much and helps the grocery bill budget. Typically I eat the same Lunch Mon- Wed, and something different Thursday & Friday. Dinners are Mon & Tuesday the same as I fix enough for leftovers(at least the main course). Wed is usually some kind of Baked chicken, Fish, or breakfast for dinner and then Thursday & Friday are the same, eating leftovers Friday, since that day is usually crazy and no time to cook.


Now Breakfast for me is pretty simple oatmeal or toast , eggs and spinach is my go to but occasionally I change it up with a Shake or something else.


I personally like to do a buffet style cooking for prep I cook all my meats, and veggies, and bulk carbs. When doing this I cook it all up and then for my lunches I currently go ahead and put them together in a container, so I can easily reheat before putting the girls down for a nap, this ensures I eat healthy food versus snacking.
